Spiced Butternut Squash Bread

Squash is usually used for dishes and soup. It is very rare for some to incorporate it with their baked goodies. Squash is very healthy and it is always a good idea to incorporate it with our dishes. The other one of our friend, sent us a whole butternut squash, around 3.4 kg. I was thinking what to do about it. Until today I come up with this easy, soft, delicious and nutritious bread recipe. I'm happy to share it with you. Ingredients 630 grams fresh, chopped squash 3 eggs 180 grams white sugar 250 ml fresh milk 3/4 cup vegetable oil 370 grams flour 1 tsp salt 1 tsp cinnamon powder 1 tsp all spice 1/2 cup chopped walnut Walnut(whole for garnish) Instructions 1. Peel and roughly chop squash. Set aside. 2. Sift and combine all the dry ingredients. 3. In a blender, put half of the chopped squash and 3 eggs. Blend until smooth. Add the remaining squash, if the blender stocked, gradually add milk until your squash mixture becomes smooth. Add vegetable oil and mix for 1 minute more. 4.

Easy Carrot Muffins

This muffin is very easy and requires ingredients that are usually readily available in your kitchen. Since its summer season here in the Philippines and harvest season also, that includes carrots that are cheaper now because of high supply. My sister don't eat carrots, and her only reason is she doesn't want the taste and smell. She's actually a picky eater and doesn't really know why she doesn't like it, ha ha. I've been experienced cook for so long, I love doing experiment in the kitchen. I always trick her with my recipes by disguising the ingredients ha ha ha. This muffin is one of those recipes. I promise you everybody will love it and no trace of carrots will be seen on your finished product. Let's begin. Ingredients 3 Large Carrots (chopped) 3 Large eggs 170g white sugar 1 tsp cinnamon powder 10g baking powder 1/2 cup vegetable oil 200ml milk 310g flour For the fillings Raisins Walnut Chocolate Chips Instructions Pre-heat oven at 365°F 1.  Sift flour

Iced Cold Coffee

Iced Cold Coffee is our favorite coolers for refreshment. The key to the best tasting iced coffee is to used only the pure and freshly grind arabica coffee beans. It requires freshly brewed espresso coffee of course. But not all households can afford to buy coffee machine or espresso machine. So, here I used mocha express, very handy coffee maker. Here's my own recipe I wanted you to try. Ingredients: 2 scoops coffee grounds 2 tbsp coco sugar 1 cup fresh milk half cup cube/tube ice pinch of cinnamon (optional) Instructions 1. Pour water in mocha express kettle (I used the 3 cups size) 2. Put on the coffee cup and put the coffee grounds. Close tightly. 3. Bring to a boil, until it finished brewing. 4. Meanwhile, in a small mason jar, put on ice and pour on milk. 5. Put the espresso coffee in a separate glass and add in sugar. Stir. 6. Pour coffee in a ice milk mixture. Sprinkle with cinnamon. Served with straw. Enjoy! Tips: Sugar is optional. Not everyone wants sweet, either you ask

Jicama Mixed Salad

This salad is very refreshing and easy to make.  Ingredients 2 cups grated jicama (Julien grater) 1 cup grated carrots 1 pc cucumber, small cubes 1 ice berg lettuce, chopped 2 pcs tomato, seeded and cube Mango Vinaigrette 1 pc ripe mango 3 tbsp olive oil 1 pc lemon juice 1tbsp honey Salt&Pepper -put everything in a food processor or blender-

Kimchi Fried Rice (Red Rice)

Kimchi fried rice is one of my favorite cooked rice. Like the basic fried rice, when I cooked kimchi rice I usually used leftover food like, ham and sausages. Here are some of the usual ingredients I usually use in my kimchi rice. I used red rice for this one. Ingredients 3 cups cooked red rice  3 pcs soft boiled egg 1 cup kimchi 4 cloves garlic, minced 1 white onion, diced 2 tbsp butter 2 pcs hungarian sausages 1 tbsp liquid seasoning mix 2 tsp brown sugar Salt and pepper Spring Onions for garnish Chili flakes(optional) Instructions 1. Melt butter in a pot, add in onion and garlic. Saute until fragrant. 2. Add in sausages and other protein you want and kimchi. Cook for 2 mins. 3. Add the rice. Mix well. 4. Add seasoning mix, salt and pepper. Cook for 3 minutes. 5. Put in a serving plate. Top with half cut boiled egg, sprinkle with spring Onions, sesame seeds and furikake if you have. Enjoy!

Ginataang Kamote with a twist

Sweetened Coconut milk desserts are always up for comfort. Have it hot or cold. Ingredients 2 pcs Large sweet potato, cubes 2 cups coconut Milk 1 cup boba pearl 3 pcs Banana Saba, cubes 1 cup Brown Sugar 1 tsp salt Ube halaya (Optional) Instructions 1.  Put coconut milk in a pot. Add in sugar and salt, boil. 2. Add sweet potato and saba. Boil until tender. 3. Add in cooked boba pearl.  4. Serve hot or cold. Top with a scoop of ube halaya and sprinkle with white sesame seeds.

Crispy Baked Pork Belly

Crispy Baked Pork Belly Ingredients Pork belly Salt&Pepper 2 pcs bay leaf 1 tsp peppercorn 2 stalk lemongrass 4 slices Ginger Dipping sauce 3 tbsp soy sauce 2 tbsp vinegar 1 chopped shallots Black pepper 1 tsp brown sugar  Instructions Put everything on a deep pot. Add water just enough to submerged the pork belly. Boil until fork tender. Drain and pat dry. Poke poke skin with fork as many as you can. Bake at 365°f for 1hr and 30 mins. After taking out from the oven, dunk pork in a boiling hot oil skin side down for 30seconds to 1 minute. Rest for 10mins before cutting. Serve with your favorite steamed vegetables.
