Spiced Butternut Squash Bread

Squash is usually used for dishes and soup. It is very rare for some to incorporate it with their baked goodies. Squash is very healthy and it is always a good idea to incorporate it with our dishes. The other one of our friend, sent us a whole butternut squash, around 3.4 kg. I was thinking what to do about it. Until today I come up with this easy, soft, delicious and nutritious bread recipe. I'm happy to share it with you. Ingredients 630 grams fresh, chopped squash 3 eggs 180 grams white sugar 250 ml fresh milk 3/4 cup vegetable oil 370 grams flour 1 tsp salt 1 tsp cinnamon powder 1 tsp all spice 1/2 cup chopped walnut Walnut(whole for garnish) Instructions 1. Peel and roughly chop squash. Set aside. 2. Sift and combine all the dry ingredients. 3. In a blender, put half of the chopped squash and 3 eggs. Blend until smooth. Add the remaining squash, if the blender stocked, gradually add milk until your squash mixture becomes smooth. Add vegetable oil and mix for 1 minute more. 4.

Easy Carrot Muffins

This muffin is very easy and requires ingredients that are usually readily available in your kitchen. Since its summer season here in the Philippines and harvest season also, that includes carrots that are cheaper now because of high supply. My sister don't eat carrots, and her only reason is she doesn't want the taste and smell. She's actually a picky eater and doesn't really know why she doesn't like it, ha ha. I've been experienced cook for so long, I love doing experiment in the kitchen. I always trick her with my recipes by disguising the ingredients ha ha ha. This muffin is one of those recipes. I promise you everybody will love it and no trace of carrots will be seen on your finished product. Let's begin.

Ingredients
3 Large Carrots (chopped)
3 Large eggs
170g white sugar
1 tsp cinnamon powder
10g baking powder
1/2 cup vegetable oil
200ml milk
310g flour

For the fillings
Raisins
Walnut
Chocolate Chips

Instructions
Pre-heat oven at 365°F
1. Sift flour, cinnamon and baking powder. Set aside.
2. Put chopped carrots in a blender or food processor. 
3. Add in eggs, blend until smooth.
4. Add milk, oil and sugar. Mix.
5.  Combine wet and dry ingredients. 
Tips: In combining the wet and dry ingredients, you can use blender or used a wire whisk and manually mix the ingredients until smoot. 
6. In muffin pan layered with muffin papers, pour batter until 3/4's full.
7. Put raisins and nuts at the bottom center using your finger or toothpick to push it down. Then chocochips on top.
8. Bake at 365°f in 25minutes.
