Spiced Butternut Squash Bread

Squash is usually used for dishes and soup. It is very rare for some to incorporate it with their baked goodies. Squash is very healthy and it is always a good idea to incorporate it with our dishes. The other one of our friend, sent us a whole butternut squash, around 3.4 kg. I was thinking what to do about it. Until today I come up with this easy, soft, delicious and nutritious bread recipe. I'm happy to share it with you. Ingredients 630 grams fresh, chopped squash 3 eggs 180 grams white sugar 250 ml fresh milk 3/4 cup vegetable oil 370 grams flour 1 tsp salt 1 tsp cinnamon powder 1 tsp all spice 1/2 cup chopped walnut Walnut(whole for garnish) Instructions 1. Peel and roughly chop squash. Set aside. 2. Sift and combine all the dry ingredients. 3. In a blender, put half of the chopped squash and 3 eggs. Blend until smooth. Add the remaining squash, if the blender stocked, gradually add milk until your squash mixture becomes smooth. Add vegetable oil and mix for 1 minute more. 4.

Pancake Platter

I love preparing breakfast. And platter is my one of my favorite. I enjoyed arranging food on a platter, looks yummy and appetizing. You don't need to spend a lot to make platter. Just plate it nicely. The basics are, pancakes or sliced bread, ham, sausages, fresh fruits of your choice, fresh tomatoes, cheeses, fried egg, jams and some sort of nuts.
Here are the ingredients you'll will for a soft and fluffy homemade panckes

2 cups APF
1/4 Cup cooking oil
1 cup fresh milk
1/2 cup water
1 egg
3/4 cup white sugar
1 tsp salt
1 tsp vanilla extract

First step is to do the creaming method by combining oil and sugar. Beat nicely then add on egg. Mix until the color turns pale yellow. Add in all remaining wet ingredients then mix well. Lastly add all the mixed dey ingredients. Be careful not to over mix the batter or it will not become fluffy.
Brush some oil on a heated pan. Over medium to low heat cook pancake depending on your preferred sizes. I used 1/4 cup for every pour. 
Arrange on a platter with the fresh fruits and ham and sausages. Enjoy!
